Oh, what a lovely Summer Vacation we had! Today Bella returned to school and I'm home trying to get caught up on three months of work.
Here are three things that we've been wanting to mention:
1. Naked Juice's Green Machine (ingredients). We discovered this juice when Bella was a baby and she's loved the green slime looking concoction ever since. Of course, this juice pales in comparison to fresh juice, but this one I know she'll drink.
And the reason why I've fallen in love with this juice all over again is because the company has recently started using 100% post-consumer recycled bottles. The bottles are recyclable and the cycle is completed by the juice being sold in completely recycled plastic. In general, I do not like plastic, but 100% post-consumer recycled plastic is the best type of plastic...if there is such a thing. ;o)
The juice also contains ethically sourced bananas. Yay Naked Juice! And it's just fun to say "get Naked!"
2. We've discovered a whole wheat muffin mix that can be made deliciously vegan and tasty for our entire family. It's Hodgson Mill's Whole Wheat muffin mix and we follow the applesauce recipe (which omits milk). For the one egg, we substitute 3 tablespoons of flax eggs. This tip is from the How it All Vegan cookbook:
Flax eggs are great as a binder in pancakes, breads, and other baking, but not to eat on their own. 3 tablespoons of flax eggs equals 1 egg.
1/3 cup whole flax seeds
1 cup water
In a blender or food processor, blend the seeds to an even meal. Then slowly add water while blending. Blend until mixture resembles a thick milkshake. Transfer to a sealable container and store in the fridge (will keep for 306 days). If you like you can pour through a strainer to remove sees. Makes the equivalent of 6 eggs.
We all love these muffins equally and Bella enjoys them with homemade honey butter.
3. And lastly we found a great kids' cookbook at the library. It's called Salad People and I can't say I was totally suprised when I realized it was written by Mollie Katzen....the author of The Moosewood Cookbook. She has written two other kids' cookbooks that we'll have to check out.
Bella made her own batch of granola from scratch using the simple pictoral recipe (her dad helped her bake it). It was delicious!
